Sirva esta deliciosa ensalada de Medio Oriente que contiene pepino, cebolla, menta, queso feta y jugo de cítricos.

Ingredients

Servings   4  

  • 2 pepinos medianos, sin semillas y cortados en cuadritos
  • 4 jitomates medianos en cuadritos
  • 1 cebolla morada mediana en cuadritos
  • ¼ taza de menta o perejil fresco picado o 1 cucharada de menta o perejil seco, desmoronado
  • 2 cucharadas de queso feta sin grasa, desmoronado
  • Jugo de 2 limas frescas
  • 1 cucharada de aceite de oliva extra virgen
  • 1/2 tsp. black pepper

  1. En un tazón grande mezcle los pepinos, los jitomates, la cebolla, la menta y el queso feta. Cubra y refrigere por 20 minutos.
  2. Vierta el aderezo sobre la mezcla de pepino, revolviendo para cubrir. Sirva inmediatamente.
  3. Pour over vegetable mixture and serve.
